Salam. I like how youre interested in the “soofie” side of things, but why not call it the Sunni side, or the Ashari or Maturidi side, since sufis come with that territory for the most part? I just dont get why everything is either sufi or either salafi?

Answer
The reason I use these labels is to categorize and study things easily as well as share things with my friends. A Label in and of itself does not mean anything, unless one of the very specific and in total meanings like Ahlus Sunnah wal Jammath.

So most everyone I am in contact with (friends, family, murids) know when I say Salafi, I mean a follower of IbnTaymiyah, and when I say Soofie or Traditional - I mean anyone who follows that way, which includes Asharees, Atharis, Maturidis, followers of madhabs, etc.)

So its just easier to split them into two categories, since accepting any one from the traditionalist for the most part imply accepting The Soofie/Traditional school - and accepting any of the salafis implies accepting the Salafi School

I choose to use Soofie instead of Traditional many times because of my Salafi Tendencies - but I do realize you can be a traditionalist, and NOT a person of tasawwuf -
